Fabric, or assembling the stack yourself?

Before Fabric, a serious Microsoft analytics estate meant wiring together Azure Data Factory, Synapse, a lake and Power BI Premium, then maintaining the joins. That option still exists, so the comparison is worth making honestly.

We have built estates both ways, and still run several of the self-assembled kind for clients whose platforms predate Fabric. This is the pattern we see across them.

For most organisations starting today, assembling the stack by hand means choosing extra plumbing for no extra value. The nuance is existing estates: where your ADF and Synapse investment is recent and healthy, we often mirror it into OneLake and migrate in phases rather than rip anything out. That judgement, made workload by workload during the readiness assessment, is the actual consulting, and it is why our Fabric migrations tend to be undramatic.
